Clayton Hills Vineyard was established in 2017 at Clayton Organic Farm in Mayfield. The first planting of the Champagne varieties covered 2.5 hectares on gentle south facing slopes running down to the river Rother. The land is a sandy silty loam which has been managed as an organic livestock farm for nearly twenty years. In 2018 a further 3 hectares has been planted. The second planting comprised Burgundy clones reflecting the owers desire to make still wine on this particularly favourable site. The highly respected organic wine making, Will Davenport, based in nearby Rotherfield, has been asked to make the wine for Clayton Hills. The first wine will be ready, in small quantities, in 2021/22.
